Fruit compote is great to have around the house. It can be used on waffles, pancakes, french toast, ice cream, pie or just about any dessert. It is easy to make and you can store it in the refrigerator for a couple weeks.
3 – cups frozen mixed berries (strawberries, blueberries, and blackberries)
1/4 – cup apricot brandy
1/8 – cup orange juice
2 – tbls. Sugar
Pour the brandy and sugar in a medium sized sauce pan. Heat until the sugar is dissolved. Add the frozen berries and orange juice. Bring to a boil and reduce the heat to a simmer, and let cook about 12 minutes.
When the compote is finished, pour it into a mason jar while it is still hot and cap it. The heat from the compote will seal the lid and you can store it in the refrigerator for about two weeks.
Warm the compote in the microwave before serving over your favorite breakfast treat or dessert.
