Tomato Sauce

Tomato (Spaghetti) Sauce

We knew we were going to have spaghetti for dinner the moment we walked into the house because of the wonderful aroma that instantly tantalized our senses. There was nothing like the smell of mom’s tomato sauce or spaghetti sauce as we called it. When you twirled your first fork full of spaghetti and brought it to your mouth, you felt like you were in heaven. Nothing else made you feel this way. We waited for the moment when it was time to taste the sauce to see if it was ready; then we tore off a small piece of crusty Italian bread and dipped it into the sauce. A big smile on our face indicated that it was done. This was our favorite part!

The recipe is very simple. There are no secrets, just good quality ingredients. Enjoy!

Ingredients:

2 – 28 oz. cans Whole Peeled Tomatoes (San Marzano if you can find them)
1 – medium onion
3 – cloves garlic
3 – dried bay leafs
6 – fresh basil leaves
1 – 6 oz. can tomato paste (Contadina preferred)
Salt to taste
Black pepper to taste
2 – pork chops on the bone or 1 lb. Italian sausage or any pork you prefer.

Directions:

In a large stock pot, heat 2 tbls. olive oil or canola oil.  Meanwhile peel a medium sized onion and add it to the hot oil.  Sprinkle a little salt and black pepper on both sides of the pork and add it to the oil along with the onion.  Cook pork until browned, then turn and brown the other side.  Turn the onion so that it does not burn.  While the pork is browning, peel the garlic and add it to the pot.  Turn often so that it does not burn.

Put the canned tomatoes into a blender and blend until smooth.  Once the meat is browned, move the meat aside and add the tomato paste.  Stir so it does not stick to the pan and cook about 1 minute.  Now, add the blended tomatoes, salt, black pepper, basil leaves, and bay leaves.  Stir well, cook on medium heat until it just starts to bubble then reduce heat to a simmer and cook about 1 to 1 1/2 hours.  Stir often to make sure the sauce does not stick to the pan.

Before serving, remove the onion and bay leaves and discard.  Remove the pork and serve along with the pasta if desired.
